After having a break from the blog and the Caprese for a couple of days over Easter weekend, we are back to business refreshed (well sort of 😉 ) and relaxed. We had a great weekend spent with the family when even the rain managed to hold off which is unusual for Glasgow! The children managed to get out in the garden for a game of football whilst Costanzo slaved over his hot stove preparing our feast for the day. Lots of wine and lots of chat made for a great day which lasted well into the night so we’re just relieved we didn’t have our usual early morning start on Monday!
Looking out of the window today, it seems the weather is starting to improve here and not before time. It has been a long winter with, it seemed, no end in sight for the bad weather but things are looking up now! The sun is forcing its way through the clouds and there seems to be a warmth in the air that we haven’t felt since, well, I can’t remember the last time! So, with happy thoughts of the summer ahead, I thought today we will feature our magnificent dish of Fresh Strawberries with Italian Ice Cream.
Ilia and Lidia , Costanzo’s daughters, are our strawberries experts 😉 and they have created a mouth-watering marinade that makes the already delicious strawberries even more delish! A blend of grenadine, white wine, freshly squeezed lemon, sugar and black pepper are added to the strawberries and left to marinate, allowing the strawberries to absorb the flavours properly. Served with our delicious Italian Vanilla Ice Cream, this really is a refreshing taste of Summer even though we don’t always have the weather to match! Buon Appetito!
