On our way into work in the mornings, we see countless delivery vans making their way to the various restaurants around Glasgow. These vans deliver a whole host of things, fish from the market, meat, wild mushrooms, fruit and vegetables, bread, wine, fresh flowers, anything really to make the lives of those who run the restaurants a little easier. Costanzo however, likes to do things differently. He likes to choose his fish, to smell the freshness for himself, to ensure he is getting the best of the best. He meanders around the fruit market, picking the firmest and ripest tomatoes from one person, the best aubergines from another and so on. Wild mushrooms? We don’t need a delivery van for that! As soon as mushroom season has started, we do it ourselves! Yes, it may mean a very early morning start on your day off when all you want to do is roll over and go back to sleep but the thrill of seeing a perfectly formed Porcini mushroom nestled under a tree makes it all worth while. All of this takes time of course, hence the reason why many restaurants do not do this for themselves.
Some may say that Costanzo is mad to create so much work for himself when he could get others to do it for him and make his life a little easier. Costanzo doesn’t agree though. He enjoys seeing what he is buying, what he is picking out in the wilderness of the Scottish hills and it gives him satisfaction to know that what eventually ends up on your plate is of the highest quality, chosen by himself and no-one else.
